Grilled Hanwoo Brisket

200g Hanwoo brisket
20g oyster mushrooms
16g shiitake mushrooms

brisket seasoning ingredients
18g sugar
30g dark soy sauce
4g minced ginger

garlic chive salad ingredients
200g chives
100g onion
100g garlic stem
-Chive seasoning sauce-
2 tbsp sesame oil
3 tbsp coarse red chili powder
1 tbsp minced garlic
1 tbsp roasted sesame seeds
2 tbsp plum extract
2 tbsp vinegar
1 tbsp sugar
Cook Order
- 1. Marinate Hanwoo brisket in the seasoning for two days.
- 2. In a heated pan, sauté the oyster mushrooms, shiitake mushrooms, enoki mushrooms, sliced green bell pepper, and onion.
- 3. Once the vegetables are partially cooked, add the marinated brisket from step ① and stir-fry over high heat to infuse a smoky flavor.
- 4. When the stir-frying is almost done, add bok choy, and finish with a drizzle of sesame oil.
- 5. -Making garlic chive salad-
- 6. Wash the garlic chives in cold water and thoroughly remove excess moisture. Slice the onion and garlic stems.
- 7. Prepare the seasoning sauce with specified ingredients.
- 8. Add the seasoning sauce from step ② to the garlic chives from step ①, and mix it while checking the taste, adding more as needed.
